Thai Sweet Chilli Fishcakes

What you will need

700g of white potato cut into large chunks

600ml milk

2 white fish fillets, skin on

1 tbsp wholegrain mustard

3 tbsp mayonnaise

6 spring onions, chopped finely

Zest of 1 lemon

Handful of parsely, roughly chopped

 

For the coating

100g plain flour

1 egg beaten

2 bags crushed crunchers

 

 

Method

Pour milk over fish and place in a pan to boil

Peel and mash 5 white potatoes

Add chopped spring onions

Mayonnaise

Mustard

Chopped parsley

The zest of 1 lemon

Season with salt and pepper

Mix together

Add the flaked fish

Mix well

Shape the mixture into individual round patties

Crush a bag of Thai Sweet Chilli Crunchers

Dip the patties in egg

Coat in the crushed Crunchers

Bake in the oven

Garnish with lemon wedges and parsley
