Serves: 6-8
What you will need
- Handful chopped walnuts (extra for decoration)
- 100g caster sugar
- 2 eggs
- 140g plain flour
- ½ tsp baking powder
- 3tbsp unsalted butter (melted)
- 100ml UFIT Iced Latte
For the filling:
- 100ml UFIT Iced Latte
- 170ml Reduced Fat Cream
- 25g icing sugar
Method
- Pre heat the oven to 180'c
- Line a shallow tin with baking paper
- Combine all of the dry ingredients in a bowl
- Add the wet ingredients and stir.
- Spread mixture onto the baking tray & bake for 10-12mins
- While baking, combine the filling ingredients until you reach a light, fluffy texture
- Once cool, spread with most of the cream filling & roll up
- Finish with the rest of the cream filling & walnuts and enjoy!
This goes great with a cup of coffee in the afternoon, or as a tasty dessert!
