Salmon is not only a great source of protein, its also packed with healthy omega 3 fats. In this recipe we will show you how to spice up a humble salad fillet with Cajun spices and how to create a simple but delicious avocado and black bean salad to serve it on.
Ingredients
Salmon fillet Cajun seasoning (made using 1 pinch of each of the following. Mustard seed, cayenne pepper, chilli powder, smoked paprika)
1 small ripe avocado
Cooked black beans
Chopped fresh tomatoes
Juice of a lemon
Splash of olive or rapeseed oil
Method
Pre-heat your oven to 200c.
Place your salmon fillet on a baking tray and top with the Cajun seasoning, the more you add the spicier it will be!
Bake in the oven for 15-20 mins (the time will depend on the size of the fillet)
To make the dressing add the lemon juice to a splash of olive or rapeseed oil along with a pinch of salt & pepper. Whisk together and set aside.
To make the avocado salad peel, de-stone and chop up your avocado, tomatoes and stir into the cooked black beans.
Top with the dressing immediately (the lemon juice will stop the avocado turning black)
Serve your freshly cooked salmon on top of the salad.
